Recognizing its potential, he envisioned it as the ideal base for an exceptional sparkling wine.

The creation of this sparkling wine, which harmoniously unites tradition and advanced technology, perfectly embodies the winery’s modern and deeply rooted essence. Under Manlio Collavini’s leadership, the winery revolutionized winemaking, introducing the first Ribolla Gialla sparkling wine. By bridging tradition and innovation, Manlio Collavini gave rise to the “Metodo Collavini”: a sparkling winemaking technique that replicates the bottle refermentation process of the Classic Champenois Method within autoclaves, utilizing 200-hectoliter horizontal tanks. This revolutionary method allows for extended lees aging, up to 30 months, imparting complexity, harmony, and elegance to the wine.
