Under Manlio Collavini’s leadership, the winery revolutionized winemaking, introducing the first Ribolla Gialla sparkling wine. By bridging tradition and innovation, Manlio Collavini gave rise to the “Metodo Collavini”: a sparkling winemaking technique that replicates the bottle refermentation process of the Classic Champenois Method within autoclaves, utilizing 200-hectoliter horizontal tanks. This revolutionary method allows for extended lees aging, up to 30 months, imparting complexity, harmony, and elegance to the wine.
